Apple and cinnamon Biscoff slice


Recipe may contain gluten, peanuts, tree nuts, milk and sesame.

Made with both crushed biscuits and the spread, this slice is truly a Biscoff fan’s dream. It also features sour cream which makes a perfectly smooth creamy filling and is an excellent tangy partner to the sweet, baked apples. If you would like to use fresh apples instead of canned, just simmer them in a little water, lemon juice and sugar until tender.

8 Ingredients

  • 2 x 124g pkts Biscoff biscuits

  • 45g (1/2 cup) desiccated coconut

  • 125g butter, melted

  • 400ml ctn sour cream

  • 1 tbsp caster sugar

  • 100g (1/3 cup) Biscoff spread

  • 410g can pink lady apple slices in juice, drained

  • 1/2 tsp ground cinnamon

5 Method Steps

  • Step 1

    Preheat oven to 180C/160C fan forced. Grease a 20cm (base measurement) square cake pan. Line the base and sides with baking paper, allowing sides to overhang.

    (2 x 124g pkts Biscoff biscuits) in a food processor and process until finely crushed. Transfer to a large bowl. Add coconut (45g (1/2 cup) desiccated coconut) and butter (125g butter, melted) and stir until well combined. Spoon biscuit mixture into prepared pan. Use the base of a flat-bottomed glass to spread and press the biscuit mixture over the base. Bake for 15 minutes or until light golden. Set aside to cool.

  • Step 3

    Meanwhile, combine sour cream (400ml ctn sour cream), sugar (1 tbsp caster sugar) and 2 tablespoons of the Biscoff spread (100g (1/3 cup) Biscoff spread) in a bowl until well combined.

  • Step 4

    Place apple slices (410g can pink lady apple slices in juice, drained), in a single layer over the biscuit base. Spoon over sour cream mixture and smooth the surface. Dust top with cinnamon (1/2 tsp ground cinnamon). Bake for 20 minutes or until the sour cream is just set and light golden. Set aside at room temperature to cool. Place in the fridge for 6 hours or overnight to set.

    Place the remaining biscoff spread in a bowl. Add a little water to thin and form a drizzling consistency. Drizzle over slice. Cut into squares to serve.
