Air fryer zucchini corn dogs

Corn dogs just got the vegetarian treatment! By swapping out the sausages for zucchini, you can now create this meat-free version of the classic party food in your air fryer! Coated in panko breadcrumbs and stuffed with loads of ricotta and cheddar, every bite will start with a crunch, and end with an ultra creamy and cheesy punch!

  • 180g fresh ricotta, crumbled

  • 25g (1/4 cup) pre-grated cheddar

  • 1 tbsp chopped fresh continental parsley

  • 4 zucchini

  • 120g (2/3 cup) instant polenta

  • 115g (3/4 cup) plain flour, plus 75g (1/2 cup) extra

  • 1 tsp caster sugar

  • 2 tsp baking powder

  • 160ml (2/3 cup) buttermilk

  • 2 eggs

  • 50g (1 cup) panko breadcrumbs

  • American mustard, to serve

  • Tomato sauce, to serve

4 Method Steps

  • Step 1

    Preheat air fryer to 200C.

  • Step 2

    Place ricotta
    (180g fresh ricotta, crumbled)
    , cheddar
    (25g (1/4 cup) pre-grated cheddar)
    and parsley
    (1 tbsp chopped fresh continental parsley)
    in a medium bowl and stir until combined. Season. Cut tops off each zucchini. Use an apple corer to carefully hollow out the centre of each zucchini from the top (without coring all the way through). Insert skewers through zucchini
    (4 zucchini)
    , creating ‘handles’ at each end. Spoon cheese mixture into a piping bag fitted with a 1cm plain nozzle. Pipe mixture into each zucchini.

  • Step 3

    Place polenta
    (120g (2/3 cup) instant polenta)
    , flour
    (115g (3/4 cup) plain flour, plus 75g (1/2 cup) extra)
    , sugar
    (1 tsp caster sugar)
    and baking powder
    (2 tsp baking powder)
    in a bowl and stir until combined. Season. Whisk buttermilk
    (160ml (2/3 cup) buttermilk)
    and eggs
    (2 eggs)
    together in a jug. Pour into polenta mixture. Whisk until combined. Transfer batter to a shallow dish. Place breadcrumbs
    (50g (1 cup) panko breadcrumbs)
    and extra flour in two separate shallow dishes.

  • Step 4

    Roll 1 zucchini in flour to coat, then dip in batter (make sure zucchini is completely submerged) and allow excess to drip back into dish. Gently roll in breadcrumbs to coat. Repeat with remaining zucchini. Place 2 zucchini in the air fryer (see notes). Spray with oil. Cook for 18-20 minutes or until tender and golden. Repeat with remaining zucchini. Serve with mustard

Recipe Notes

It is important not to overcrowd the air fryer. We fit 2 zucchini in a single layer in our air fryer. You may need to cook the zucchini in more or fewer batches depending on the size of your air fryer and zucchini.
