Air fryer vegetarian Christmas log

This easy veggie packed Christmas log features a lemon infused ricotta filling, adding a zesty kick to your festive feast. To make it even better, it’s whipped up in the air fryer!

11 Ingredients


  • 1 tbsp olive oil

  • 1 brown onion, finely chopped

  • 3 garlic cloves, crushed

  • 2 tsp fresh thyme leaves

  • 500g frozen spinach, thawed, excess liquid squeezed

  • 300g fresh ricotta, crumbled

  • 180g haloumi, coarsely grated

  • 1 tbsp finely grated lemon rind

  • 2 eggs, plus 1 egg, lightly whisked

  • 2 ½ sheets frozen puff pastry, just thawed

  • Spicy tomato chutney, to serve

5 Method Steps


  • Step 1

    Heat oil

    (1 tbsp olive oil) in a frying pan over medium heat. Add onion (1 brown onion, finely chopped), garlic (3 garlic cloves, crushed) and thyme (2 tsp fresh thyme leaves) and cook, stirring, for 5 minutes or until the onion has softened. Transfer to a large bowl.


  • Step 2

    Add the spinach (500g frozen spinach, thawed, excess liquid squeezed), ricotta (300g fresh ricotta, crumbled), haloumi (180g haloumi, coarsely grated), lemon rind (1 tbsp finely grated lemon rind) and 2 eggs to the onion mixture. Mix until well combined. Season.

  • Step 3

    Place one whole sheet of pastry (2 ½ sheets frozen puff pastry, just thawed) on a clean work surface. Place half the spinach mixture on the pastry, about 3cm from the edge closest to you. Shape spinach mixture into a log shape. Roll up pastry to enclose filling. Seal. Repeat with the remaining whole sheet of pastry and spinach filling.

  • Step 4

    Brush top of rolls with the lightly whisked egg. Use cookie cutters to cut six 6cm stars and six 3cm stars out of the remaining pastry. Top logs with stars. Brush with egg.

  • Step 5

    Preheat air fryer at 180C for 3 minutes. Place rolls into the air fryer basket (see note). Cook for 20 minutes or until pastry is golden and filling is heated through. Slice and serve with chutney (Spicy tomato chutney, to serve).

Recipe Notes

Depending on your air fryer, you may be able to fit both logs in at once. Just make sure you leave enough space for air to circulate and cook the pastry.
