1 slice day-old bread
25g butter, melted
2 tsp chopped fresh dill, plus extra, to serve
2 tsp chopped fresh chives
2 (about 180g each) skinless salmon fillets
Extra virgin olive oil, to serve
Lemon wedges, to serve

Step 1Place the bread(1 slice day-old bread) in a small food processor. Process until fine crumbs form. Transfer to a bowl. Add butter (25g butter, melted), dill (2 tsp chopped fresh dill, plus extra, to serve) and chives (2 tsp chopped fresh chives) to the bowl. Season. Stir well to combine. Press mixture over the top of each salmon (2 (about 180g each) skinless salmon fillets) fillet.

Step 2Place the herb-crusted salmon in the basket. Cook for 4 minutes or until salmon is cooked to your liking. Drizzle with oil (Extra virgin olive oil, to serve). Serve with lemon wedges (Lemon wedges, to serve) and fresh dill.
