Air fryer pork belly bites

Meltingly tender and crispy all at the same time – that’s the brilliance of pork belly. The trick to super crispy pork crackling is placing the pork belly in the fridge overnight to help to dry out the skin and maximise the crackle. Plus, cooking it in the air fryer allows the skin to dry out even further while keeping the meat underneath incredibly moist. This is a great way to enjoy pork belly in minutes of cooking rather than hours in the oven.

7 Ingredients


  • 1kg piece boneless pork belly

  • Sea salt, to sprinkle
  • Orange soy caramel


  • 250ml (​​1 cup) fresh orange juice

  • 3cm knob ginger, peeled and thinly sliced

  • 2 whole star anise

  • 100g (1/2 cup) caster sugar

  • 2 tbsp light soy sauce

3 Method Steps


  • Step 1

    Place the pork belly
    (1kg piece boneless pork belly)
    in a shallow dish. Place in the fridge for at least 8 hours or overnight to dry out (do not cover the pork with plastic wrap as it needs to dry out). Cut the pork into 4cm pieces.

  • Step 2

    Meanwhile, make the orange soy caramel. Place all the ingredients
    (250ml (​​1 cup) fresh orange juice|3cm knob ginger, peeled and thinly sliced|2 whole star anise|100g (1/2 cup) caster sugar|2 tbsp light soy sauce)
    in a saucepan over medium heat. Stir until the sugar dissolves. Increase the heat to high and simmer for 10-15 minutes or until sauce reduces and thickens.

  • Step 3

    Spray pork liberally with oil. Sprinkle with salt
    (Sea salt, to sprinkle)
    . Place half the pork in the air fryer basket. Cook at 200C for 15 minutes or until just golden and crisp. Transfer to a bowl. Repeat with remaining pork. Serve with caramel.

Recipe Notes
