It’s now super easy to make okonomiyaki, Japanese savory pancakes, with the help of your air fryer and some egg rings. These are also mini versions, perfect as canapes or snacks. Drizzle with tonkatsu sauce and mayonnaise and just wait for that flavour explosion in your mouth.
150g (1 cup) plain flour
2 tbsp soy sauce
60ml (¼ cup) dashi stock or vegetable stock
3 cups shredded wombok (Chinese cabbage) or green cabbage
1 carrot, peeled, coarsely grated
Canola oil spray
Tonkatsu sauce, to serve
Kewpie mayonnaise, to serve
Pickled ginger, to serve
Sliced green shallot, to serve
Toasted sesame seeds, to serve
3 Method Steps
Step 1Whisk flour(150g (1 cup) plain flour), eggs (4 eggs), soy sauce (2 tbsp soy sauce) and dashi (60ml (¼ cup) dashi stock or vegetable stock) stock in a large bowl. Add the cabbage (3 cups shredded wombok (Chinese cabbage) or green cabbage) and carrot (1 carrot, peeled, coarsely grated) and mix to combine. Season.

Step 2Place 4 egg rings in an air-fryer basket. Spray with oil (Canola oil spray). Fill each ring with approximately 80ml (⅓ cup) cabbage mixture and air fry at 180C for 8 minutes. Transfer to a plate. Keep warm. Repeat with remaining cabbage mixture, spraying the air fryer with oil each time.
Step 3Drizzle pancakes with tonkatsu sauce (Tonkatsu sauce, to serve) and mayonnaise (Kewpie mayonnaise, to serve). Use a skewer to create a pattern. Top with pickled ginger (Pickled ginger, to serve), sliced (Sliced green shallot, to serve) spring onions and sesame seeds (Toasted sesame seeds, to serve) as desired.
