Air fryer nacho sweet potatoes

A quick and filling dinner or snack that you can feel good about eating. Swap the cheese and sour cream out for plant-based cheese and yoghurt to make this vegan!

9 Ingredients


  • 2 (about 200g each) small sweet potatoes

  • 400g can black beans, rinsed, drained

  • 125g corn kernels, drained

  • 125ml (1/2 cup) taco sauce or tomato salsa, plus extra, to serve

  • 35g (1/3 cup) coarsely grated cheddar

  • Corn chips, to serve

  • 1/2 avocado, mashed

  • 2 tbs sour cream

  • 2 tsp chopped fresh coriander leaves

4 Method Steps


  • Step 1

    Scrub the sweet potatoes

    (2 (about 200g each) small sweet potatoes) and prick a few times with a small sharp knife. Place in an air fryer basket and cook at 180°C for 30 minutes.


  • Step 2

    Meanwhile, combine the black beans (400g can black beans, rinsed, drained), corn (125g corn kernels, drained) and sauce or salsa (125ml (1/2 cup) taco sauce or tomato salsa, plus extra, to serve) in a bowl.

  • Step 3

    Remove the sweet potatoes from the air fryer and place each on a piece of baking paper so you can lift them in and out of the air fryer. Make a cut lengthways along each sweet potato, making sure not to cut all the way through. (Be careful as it will be hot.) Open sweet potatoes wide to create a ‘bowl’. Top with the bean mixture, pressing gently with the back of a spoon to secure. Sprinkle with 25g (1/4 cup) cheddar (35g (1/3 cup) coarsely grated cheddar).

  • Step 4

    Carefully lift the sweet potatoes into the air fryer basket. Cook at 180°C for 3 minutes or until heated through and cheese has melted. Top with some corn chips (Corn chips, to serve) and remaining cheddar. Cook for a further 2 minutes or until cheese has melted. Carefully lift the sweet potatoes onto serving plates. Top with the avocado (1/2 avocado, mashed), sour cream (2 tbs sour cream), coriander (2 tsp chopped fresh coriander leaves) and extra sauce or salsa. Season and serve.
