(2 tsp rice bran oil) in a small frying pan over medium-high heat. Add onion (¼ medium brown onion, finely chopped) and cook, stirring, for 4-5 minutes or until golden. Add the spinach (80g frozen spinach, thawed, excess water squeezed out) and cook, stirring, for 30 seconds or until combined. Remove from heat. Set aside to cool.

  • Step 2

Place the pastry (1 sheet frozen puff pastry, just thawed) on a large chopping board. Place the feta (200g Danish feta, halved horizontally) in the centre. Top with onion mixture. Slice pastry diagonally into 2cm-wide strips along the long sides of the filling. Fold in the short ends. Fold 1 strip of pastry over the filling, then fold in another strip from the opposite side, slightly overlapping. Continue alternating the strips over the filling until completely enclosed. Discard excess pastry or save for another use.

  • Step 3

Place in an air fryer and brush with egg (1 egg yolk, lightly whisked). Cook at 180C for 15 minutes or until crisp and golden.

  • Step 4

Cut into slices. Serve with lemon wedges (Lemon wedges, to serve (optional)), if using.
