Recipe may contain peanuts, tree nuts, milk, soy and sesame.

These accordion potatoes have been trending on TikTok for a good reason – they are satisfyingly crunchy and addictive. Give them a go, they are a lot easier to make than they look. Our version has a French onion flavour and is made in an air fryer which means it’s better for you and cooked in no time.

(4 large potatoes, peeled) lengthways into 1.5cm-thick slices. Lay flat on a chopping board. Score each slice horizontally, at 0.5mm intervals, being careful not to cut right through the potato. Flip the potato slices and repeat, this time scoring on a diagonal. Place in a bowl of water to prevent browning while you complete scoring the slices. Drain potato and pat dry with paper towel. Thread the slices onto small thin bamboo skewers (from small to large to small), then fan the potato along the skewer to display the accordion pattern. Place on a tray.

  • Step 2

Combine the oil (50g vegetable oil) and 1 tablespoon of French onion soup mix (40g pkt French onion soup mix) in a small bowl or jug. Brush over potato skewers. Arrange skewers in the basket of an air fryer and cook at 180C for 15 minutes or until crispy on the outside and tender on the inside.

  • Step 3

Use electric hand beaters to beat the sour cream (150g sour cream), cream cheese (150g cream cheese, softened), mayonnaise (150g whole egg mayonnaise) and remaining soup mix in a bowl to combine. Stir in the shallot (4 green shallots, finely chopped).

  • Step 4

Serve the accordion potatoes with a bowl of French onion dip on the side.
