Air fryer chicken, bacon and creamed corn roll-ups

With deceptively few ingredients, our latest air fryer chicken recipe, is full of flavour. Serve these tasty pockets with mexican rice or roast potatoes. Make sure the cream cheese is at room temperature for easy mixing.

7 Ingredients

  • 1 chicken breast fillet

  • 90g can creamed corn

  • 60g cream cheese, chopped, at room temperature

  • 40g (1/2 cup) pre-grated 3 cheese blend

  • 1 tbsp chopped fresh coriander

  • 4 streaky bacon rashers

  • Tomato salsa, to serve

4 Method Steps

  • Step 1

    Use a long sharp knife to slice the chicken breast

    (1 chicken breast fillet) in half horizontally. Use a meat mallet to pound out the chicken breasts to about 5mm-thick.

  • Step 2

    Combine the corn (90g can creamed corn), cream cheese (60g cream cheese, chopped, at room temperature), cheese blend (40g (1/2 cup) pre-grated 3 cheese blend) and coriander (1 tbsp chopped fresh coriander) in a bowl. Top one chicken piece with half the mixture. Top remaining chicken piece with remaining mixture. Carefully roll from the short end of the chicken to enclose. Wrap each piece of chicken in two pieces of bacon (4 streaky bacon rashers). Secure with toothpicks.

  • Step 3

    Spray the basket of the air fryer with oil. Place the chicken in the basket and air fry at 180C for 15 minutes, turning halfway through cooking, or until cooked through.

  • Step 4

    Discard toothpicks. Slice the chicken and serve with salsa (Tomato salsa, to serve).
