Air fryer cheesy corn ‘ribs’


Recipe may contain gluten, milk, sesame, wheat and lactose.

These corn ‘ribs’ are created by quartering the corn lengthways. Smothered in Mexican seasoning and parmesan, this dish will become your new favourite air fryer recipe. Serve it with a tangy lime sauce, as a side, an entree or a snack.

7 Ingredients

  • 3 corncobs

  • 50g salted butter, at room temperature

  • 45g pkt Mexican seasoning
  • Lime sauce

  • 130g (½ cup) Greek yogurt

  • 125g (½ cup) sour cream

  • 1 lime, rind finely grated, juiced, plus extra wedges, to serve

  • Finely grated parmesan, to serve

4 Method Steps

  • Step 1

    Place corncobs

    (3 corncobs) in a large microwave-safe dish. Cover with damp paper towel. Microwave on High for 8 minutes or until tender. Use a sharp knife to cut corncobs down the centre, lengthways. Cut in half again to create 4 long ‘ribs’.

  • Step 2

    Reserve 1 tbsp Mexican seasoning. Combine butter (50g salted butter, at room temperature) and remaining Mexican seasoning in a bowl. Brush corn ribs with butter mixture. Place in an air fryer basket. Air fry at 180°C for 10-12 minutes or until charred and crispy.

  • Step 3

    Meanwhile, to make the lime sauce, combine yogurt (130g (½ cup) Greek yogurt), sour cream (125g (½ cup) sour cream), reserved seasoning, rind and juice in a bowl.

  • Step 4

    Arrange corn ribs on a serving plate. Drizzle with lime sauce. Sprinkle with parmesan (Finely grated parmesan, to serve). Serve with extra lime wedges.
