Air fryer Caramilk custard

How do you make Caramilk-flavoured custard taste even better? Cook it in the air fryer so it’s crispy on the outside but stays soft and gooey on the inside. You can thank us later.

11 Ingredients

  • 750ml (3 cups) milk

  • 1 cinnamon stick

  • 2 eggs

  • 2 egg yolks

  • 140g (2/3 cup) caster sugar

  • 105g (3/4 cup) cornflour

  • 1 tsp vanilla bean paste

  • 180g block Caramilk chocolate, chopped

  • 75g (1/2 cup) plain flour

  • Icing sugar, to dust

  • Ground cinnamon, to sprinkle

8 Method Steps

  • Step 1

    Grease and line an 18cm x 28cm lamington pan with baking paper.

  • Step 2

    Place milk
    (750ml (3 cups) milk)
    and cinnamon stick
    (1 cinnamon stick)
    in a medium saucepan and bring to a simmer over medium heat.

  • Step 3

    Whisk eggs
    (2 eggs)
    , yolks
    (2 egg yolks)
    , caster sugar
    (140g (2/3 cup) caster sugar)
    , cornflour
    (105g (3/4 cup) cornflour)
    and vanilla
    (1 tsp vanilla bean paste)
    in a large bowl until well combined. Strain milk mixture over egg mixture and whisk until combined. Discard cinnamon stick.

  • Step 4

    Return milk mixture to a clean medium saucepan. Cook, stirring constantly, over medium-low heat for 5 minutes or until mixture bubbles and thickens (see note). Add Caramilk
    (180g block Caramilk chocolate, chopped)
    and stir until smooth.

  • Step 5

    Pour custard into prepared pan and smooth top. Cool for 30 minutes. Place in fridge for 3 hours or until firm.

  • Step 6

    Turn custard out onto a chopping board. Cut into 3cm x 5cm fingers. Coat each piece in flour
    (75g (1/2 cup) plain flour)
    , shaking off excess.

  • Step 7

    Spray the basket of an air fryer with oil. Place a few custard pieces in basket and spray with oil. Cook on 200C for 10 minutes or until golden. Cool for 5 minutes. Repeat with remaining custard pieces.

  • Step 8

    Dust custard with icing sugar
    (Icing sugar, to dust)
    and cinnamon. Serve.

Recipe Notes

If mixture starts to form lumps, use a whisk to make the mixture smooth.
