The air fryer is your secret weapon for easy, delicious beef Wellington. Wrapped in prosciutto and crispy puff pastry, this simple dinner is set to impress.
1 tbsp olive oil
2 x 3.5cm-thick (about 150g each) beef eye fillet steaks
200g button mushrooms, finely chopped
2 French shallots, peeled, finely chopped
2 garlic cloves, crushed
7 slices prosciutto
2 tsp Dijon mustard
1 sheet frozen puff pastry, just thawed
1 egg, lightly whisked
Steamed broccolini, to serve
Onion relish, to serve
5 Method Steps
Step 1Heat the oil(1 tbsp olive oil) in a large frying pan over high heat. Cook the steaks (2 x 3.5cm-thick (about 150g each) beef eye fillet steaks), turning, for 3-4 minutes or until just browned all over. Transfer to a plate and place in the fridge until cooled slightly.

Step 2Reduce heat to medium. Add mushrooms (200g button mushrooms, finely chopped), shallot (2 French shallots, peeled, finely chopped) and garlic (2 garlic cloves, crushed) to pan. Cook, stirring, for 15 minutes or until golden and liquid has evaporated. Transfer to a plate. Place in fridge for 5 minutes or until cooled slightly.
Step 3Lay 6 prosciutto (7 slices prosciutto) slices on a sheet of plastic wrap, overlapping slightly, to make a rectangle. Spread over mushie mixture, leaving a thin border. Place steaks lengthways on top of rectangle. Spread steaks with mustard (2 tsp Dijon mustard). Fold prosciutto over the steaks. Lay remaining prosciutto slice on top lengthways to cover any gaps. Tuck in ends. Wrap firmly in plastic wrap. Place in the fridge for 20 minutes to chill.
Step 4Lay the pastry (1 sheet frozen puff pastry, just thawed) on a flat surface. Unwrap the log and place centred on pastry. Fold over pastry to enclose, tucking in ends to seal. Place, seam-side down, on a piece of baking paper. Brush the top with egg (1 egg, lightly whisked) and use a knife to score the pastry diagonally.
Step 5Place in air fryer basket. Cook at 180C for 20 minutes for medium rare or until cooked to your liking. Serve with broccolini (Steamed broccolini, to serve) and relish (Onion relish, to serve).
