Air fryer apple and cinnamon fritters

The air fryer takes all the work out of making fresh fritters at home. Warm and toasty, they’re perfect dipped in custard for afternoon tea.

  • 225g (1 1/2 cups) self-raising flour 

  • 100g (1/2 cup) caster sugar

  • 1 tsp ground cinnamon

  • 125ml (1/2 cup) apple juice 

  • 1 tsp vanilla extract

  • 2 eggs

  • 2 pink lady apples, unpeeled, coarsely grated 

  • 50g butter, melted

  • Vanilla custard, to serve

  • Step 1

    Combine the flour

    (225g (1 1/2 cups) self-raising flour ), salt, 50g sugar and 1/2 tsp cinnamon in a large bowl. Make a well in the centre. Whisk the juice (125ml (1/2 cup) apple juice ), vanilla (1 tsp vanilla extract) and eggs (2 eggs) in a jug until well combined. Pour egg mixture into flour mixture. Stir until just combined (do not overmix). Stir in the apple (2 pink lady apples, unpeeled, coarsely grated ).


  • Step 2

    Line the base of an air fryer basket with baking paper. Spoon 60ml (1/4 cup) of the batter onto the baking paper (depending on the size of your basket, you may fit 2 or 3 fritters at a time. Do not overcrowd the pan, as they will expand while cooking). Spray with oil. Bake for 5 minutes at 200°C. Turn fritters. Bake for a further 5 minutes or until golden and cooked through. Repeat with remaining batter.

  • Step 3

    While the fritters are cooking, combine the remaining 50g sugar and 1/2 tsp cinnamon in a shallow bowl. Remove the fritters from the air fryer. Brush all over with melted butter (50g butter, melted). Dip fritters, one at a time, in cinnamon sugar. Turn to coat.

  • Step 4

    Serve the fritters immediately with custard (Vanilla custard, to serve), to dip.
