Air-fried milk

This easy air fryer dessert pays homage to a traditional Chinese dessert, fried milk. It’s also similar to the Spanish version, ‘leche frita’. Crispy on the outside, soft and custard-like on the inside, this cinnamon sugar-dusted sweet treat will soon become one of your favourite recipes.

  • 1.2L milk

  • 2 cinnamon sticks

  • 2 strips lemon rind

  • 4 eggs

  • 2 egg yolks

  • 215g (1 cup) caster sugar

  • 140g (1 cup) cornflour

  • 2 tsp vanilla extract

  • 120g (3/4 cup) plain flour

  • Cinnamon sugar, to sprinkle

  • Step 1

    Grease and line a 20cm x 30cm lamington pan with baking paper.

    (1.2L milk), cinnamon (2 cinnamon sticks) and lemon rind (2 strips lemon rind) in a medium saucepan and bring to a simmer over medium heat.

  • Step 3

    Whisk eggs (4 eggs), yolks (2 egg yolks), caster sugar (215g (1 cup) caster sugar), cornflour (140g (1 cup) cornflour) and vanilla (2 tsp vanilla extract) in a large bowl until well combined. Strain milk mixture over egg mixture and whisk until combined. Discard cinnamon sticks and rind.

  • Step 4

    Return milk mixture to a cleaned medium saucepan. Cook, stirring constantly, over medium-low heat for 5 minutes or until mixture bubbles and thickens (see note).

  • Step 5

    Pour milk mixture into prepared pan and smooth top. Cool completely and place in fridge for 3 hours or until firm.

  • Step 6

    Turn milk mixture out onto a chopping board. Cut into 3.5cm squares. Coat each square in flour (120g (3/4 cup) plain flour), shaking off excess.

  • Step 7

    Spray the basket of an air fryer with oil. Add some milk squares to fryer and spray with oil. Cook on 200C for 10 minutes or until golden. Repeat with remaining milk squares.

  • Step 8

    Sprinkle milk squares with cinnamon sugar (Cinnamon sugar, to sprinkle) and serve.

Recipe Notes

If mixture starts to form lumps, use a whisk to make the mixture smooth.
