3-ingredient pie maker banana pancakes

Over-ripe bananas in the fruit bowl? Just grab 2 eggs and some self-raising flour and create easy, healthy banana pancakes using just 3 ingredients, all in the convenience of your pie maker!

4 Ingredients

  • 2 over-ripe bananas, plus 1 ripe banana, sliced, to serve

  • 2 eggs

  • 75g (1/2 cup) self-raising flour

  • Maple syrup or honey (optional) to drizzle

3 Method Steps

  • Step 1

    Use a fork to mash the bananas

    (2 over-ripe bananas, plus 1 ripe banana, sliced, to serve) in a medium bowl until smooth. Whisk in the eggs (2 eggs). Gradually stir in the flour (75g (1/2 cup) self-raising flour) until a smooth batter forms. Set aside for 10 minutes to rest.

  • Step 2

    Spoon enough of the mixture to come to the top of the pie maker holes. Turn on the pie maker. Close and cook for 7 minutes or until golden and cooked through. Transfer pancakes to a plate. Repeat with the remaining batter.

  • Step 3

    Serve the pancakes topped with the sliced banana and drizzled with maple syrup or honey (Maple syrup or honey (optional) to drizzle), if using.
