3-ingredient fruit cake

It’s incredible what can be achieved with just three ingredients! This super easy version of the traditional Christmas cake is made with iced coffee which adds so many layers of flavours but all packed in just one ingredient.

3 Ingredients

  • 1kg (5 1/2 cups) mixed dried fruit

  • 600ml iced coffee flavoured milk

  • 300g (2 cups) self-raising flour

  • Step 1

    Combine the dried fruit

    (1kg (5 1/2 cups) mixed dried fruit) and iced coffee flavoured milk (600ml iced coffee flavoured milk) in a large bowl. Stir to combine. Cover and place in the fridge overnight to soak.

  • Step 2

    Remove the bowl from the fridge and set aside for 30 minutes to come to room temperature.

  • Step 3

    Meanwhile, preheat the oven to 180C/160C fan forced. Grease a 22cm round cake pan. Line base and side with baking paper.

  • Step 4

    Stir the flour (300g (2 cups) self-raising flour) into the fruit mixture. Stir until just combined. Pour into the prepared pan. Smooth the surface. Bake for 1 hour 30 minutes or until a skewer inserted into the centre comes out clean. Set aside in the pan for 30 minutes to cool slightly before transferring to a wire rack to cool completely.

Recipe Notes

This cake would freeze really well. Wrap either the whole cake or slices in a double layer of plastic wrap and freeze for up to 3 months.
