Made with just self-raising flour and vanilla bean yoghurt, these super easy doughnuts are crispy on the outside and fluffy in the middle. They’re the perfect thing to whip up when unexpected guests pop by. Beware: it’s hard to stop at one!

  • 300g (2 cups) self-raising flour, plus extra, to dust

  • 250g vanilla bean Greek-style yoghurt

  • Rice bran oil, to deep-fry

  • Cinnamon sugar, to coat

2 Method Steps


  • Step 1

    Place flour
    (300g (2 cups) self-raising flour, plus extra, to dust)
    and yoghurt
    (250g vanilla bean Greek-style yoghurt)
    in a medium bowl. Use clean hands to mix until the dough comes together. Roll tablespoonfuls of the dough into balls.

  • Step 2

    Place cinnamon sugar
    (Cinnamon sugar, to coat)
    in a bowl. Pour oil
    (Rice bran oil, to deep-fry)
    into a medium saucepan to a depth of 5cm. Place over a medium heat and heat to 170C on a cook’s thermometer (when the oil is ready, a cube of bread will turn golden in 15 seconds). Deep-fry balls, in batches, for 3-4 minutes or until golden. Toss hot doughnuts in cinnamon sugar. Serve warm.
