This easy cheesy baked rice dish utilises a number of cheats – canned salmon, frozen veg, jarred sauce – to get a nutritious, filling dinner on the table tout suite!

7 Ingredients


  • 490g jar pasta bake three-cheese sauce

  • 415g can red salmon, drained, flaked, large bones discarded

  • 250g (11 ⁄2 cups) frozen peas, corn & capsicum

  • 60ml (1 ⁄4 cup) thickened cream

  • 1 green shallot, thinly sliced

  • 450g packet microwave long grain white rice

  • 120g (11/2 cups) coarsely grated cheddar

  • Step 1

    Place the pasta sauce

    (490g jar pasta bake three-cheese sauce), salmon (415g can red salmon, drained, flaked, large bones discarded), frozen vegies (250g (11 ⁄2 cups) frozen peas, corn & capsicum), cream (60ml (1 ⁄4 cup) thickened cream) and shallot (1 green shallot, thinly sliced) in a saucepan over medium-high heat. Cook, stirring, for 3-4 minutes or until the mixture comes to the boil.


  • Step 2

    Meanwhile, heat the rice (450g packet microwave long grain white rice) in the microwave following packet directions. Spread the rice over the base of a 2L (8 cup) greased baking dish.

  • Step 3

    Preheat the oven grill to high. Spread the salmon mixture over the rice. Sprinkle with the cheese (120g (11/2 cups) coarsely grated cheddar). Grill for 3 minutes or until the cheese is golden and melted.

Prefer a vegetarian bake? Simply omit the salmon and add 2 finely chopped zucchini.
